On January 22, 2012 we participated in the North Palm Beach Chili cook off and won Judge’s Choice for best chili in a blind tasting. Come get some chili and see why we won!
What is pork butt you ask? And why do you want to be eating it?! Pork butt, despite its suggestive name, does not come from anywhere near the butt of the pig. Pork butt is a cut of meat from the thicker end of the shoulder of the pig. Seriously. This area has more marbling and thus
makes the “butt” an excellent cut for pulled pork and barbecue. Pulled pork is the end-product from a properly cooked butt (shoulder). We smoke the butt for 8-10 hours with low, indirect heat using hickory wood. This process allows the connective tissues to soften and melt into gelatin, the fat bastes and moistens the meat, and the outside develops a flavorful crust. Once finished smoking, the meat is fall-off-the-bone tender and juicy. After cooling, we pull it off of the bone in big chunks by hand, and then those chunks are pulled and chopped into bite-size pieces. From there we take the meat and prepare it into a sandwich or platter of your liking. Top it with our delicious BBQ sauce and you are good to go!

The night is sure to be a blast. There will be live music, the Lexus Lounge, a dazzling firewords display and of course Mrs. Smokey’s best darn bbq in town! We will be bringing mini pulled pork barbecue sandwich sliders and a taste of our delicious barbecue beans!
While the night will be a great time, it will have an even greater impact long after the final sample is tasted. This event serves as the primary fundraising initiative for the Big Heart Brigade’s Thanksgiving Dinner Drive. Patrons, sponsors, friends and neighbors recognize this is far more than just a chance to sample fantastic food and share some laughs, it’s an opportunity to help those who are less fortunate in our community receive a meal on Thanksgiving.
